Ingredients:
– Carrots
– Asparagus
– Salmon
– Quinoa
– Seasoning for veggies (I used Trader Joes Salmon Rub)
– Maple Syrup
– Honey Mustard
– Nuts (I used pistachio, walnut, cashew)
– lime/lemon (optional)
(Don’t let this long list fool you, this is recipe is really easy).
– Quinoa – usually 1 part quinoa + 2 parts water
– I put carrots/asparagus/salmon on a pan in the oven at 400 for about 18 minutes, then set the temperature higher towards the end (440 for about 4 minutes).
