Easy Orzo Salad Orzo Salad Recipes How to cook Orzo

This is one of our favorite and go-to salads especially in Summer! Such a delish and fills you up quickly. Great to serve when you are hosting/BBQ or a quick dinner for the fam. It makes a great last minute salad.
Takes about 20 mins to put together. You can always prep few hours before or even a day before. Place in fridge until ready to serve.
Ingredients:
* Orzo- cooked (half a box about 1/2 lb- follow instructions on box)
* Cherry tomatoes halved (half a pint)
* 3 Persian cucumbers (cut in half)
* 1 small red onion (sliced)
* 1 cup of chickpeas
* 3/4 cup kalamata olives
* 1/2 cup Feta cheese- Crumbled (Optional) Fresh mint (Chopped) Salt & pepper to taste.
Dressing:
* Half lemon squeezed
* 1 tsp oregano
* 3 Tbsp olive oil
* 1 Tbsp dijon mustard Salt & black pepper to taste
Mix it all ingredients together and add dressing to salad. Follow along to see how I put this salad together. I like to add olive oil to the Orzo and mix it before I put the remaining ingredients. It prevents the Orzo from sticking together.
