Nandita shows us this tri coloured recipe of some healthy salad on the occasion of Republic Day. The dressing is full of fragrant flavours of basil, coriander & cumin teamed with Yogurt. This simple and super quick recipe is sure to excite your taste buds so try it out at home and let us know what you think 🙂
Ingredients:
2 medium Carrots
2 medium Radish
1 green Capsicum
Dressing:
1/2 cup Yogurt
1/2 cup fresh Coriander Leaves
1/4 cup Basil Leaves
1 tsp Cumin Seeds
2 Garlic Cloves
1/4 tsp Salt
1 tbsp extra virgin Olive Oil
Chop the vegetables into batons of similar size. Arrange them on a platter for the saffron, white and green layer.
In a small jar of the mixer, whisk together the yogurt, herbs, cumin seeds, garlic. Once it is a smooth puree, add the extra virgin olive oil and salt and pulse a couple of times.
Pour the dressing over the arranged vegetables and serve immediately!
Tip: Team up this salad with some tricoloured rice & a tricoloured loaf cake to enjoy a complete Republic Day meal!
