Taco salad the dressing one thing I’m going to do is put y’all on to a good dressing okay so let’s get into everything that you’ll need to use this is what we’re going to be using for our homemade Pico situation have a jalapeno lime a tomato red onion and we’re also

Going to bring over some cilantro and then over here this is going to be our salad dressing so we have some dairyfree plain unsweetened yogurt I have some garlic cloves we also have some cilantro half of a jalapeno avocado and lime our leafy greens consist of Dino kale as well as

Some roma lettuce and the protein in the salad is coming from so these are ground pea protein crumbles these are really good and they peack a lot of protein this is hemp seeds this is we’re just going to sprinkle this on top have some black beans here that we’ll season up as

Well and then for the toppings I have some vegan nacho cheese chips as well as some crispy jalapenos so I’m actually starting off with the Pico so this is just what I’ve always use in my Pico maybe you have another Pico recipe that you want to share and if you do be sure

It comes to pea protein crumbles I’ve used plant boss as well as Noble PL I’ll link both of those in the description box here are the pea protein crumbles so they come dehydrated they’re very hard so you have to rehydrate them with water or broth I do want to mention if you

Don’t want to use the pea protein crumbles you can also do this with Tempe you can you can do it with tofu I’ve done it with mushroom and walnut me it was delicious or you can even just use store bought plant-based grounds I enjoy using the pea protein grounds it has a

Really good amount of protein I want to say 1/3 cup of this pea protein ground has about 15 GS of protein I’m actually using half a cup cuz I want to get a little extra boost of protein and this is just hot water as you can see it has

Color because it has those seasonings in there I am going to add my own seasonings as well we’re just going to let this sit going to cover it with a paper towel so for the dressing I have some dairyfree plain unsweetened yogurt I really like garlic so I’m going

To go in with three garlic cloves have half of a lime half of a jalapeno with the seeds removed handful of the cilantro half of an avocado some salt and black pepper I’m going to add some plant milk to thin it out and now that this is done we’re

Going to put it in the fridge and move on to cooking our pea protein so here the pea protein crumbles rehydrated there is still a good amount of water left which I don’t mind because it’s just going to cook out pretty much and then we’re going to season it up so I

Like to season it with this C Foods taco seasoning you can do you know a homemade taco seasoning if you want this is just easier for me and I don’t have to go through everything that I have in here and so while the pea protein crumbles are cooking on the stove have

Black beans you can honestly just add the black beans on there as is we just wanted to have an abundance of flavor because no boring salads okay no no boring salads lime cilantro there’s a lot of cilantro in this salad so you don’t need too much and then the last

Thing I’m going to do is season it with some more of this ciete Foods taco seasoning shaky shake and now the very last thing to do is cut up our leafy greens as mentioned I’m going in with Dino kale as well as Roma lettuce you

Can use arugula if you like or just any leafy green that you Prefer this is going to help it be a bit more digestible you can also do this with lemon or even olive oil so you may be thinking what else can I do with those pea protein crumbles if I end up using them I’ve used those in

Tacos I’ve used it in taquitos which I love taquitos you can use it in spaghetti a pasta I would say anywhere where you you’ve used like a plant-based ground or ground beef or ground turkey or something like that you can substitute those pea protein crumbles

And use it in its place there are a number of ways that you can actually use it we’re going to go in with our leafy greens black beans pea protein then I’m going to go in with our Pico vegan nacho cheese chips so I have some vegan cheese

I only have slices so I just layered them on top of each other and I’m going to zest the vegan cheese on top this brand of vegan cheese is V life but I also enjoy eating follow your heart and I want to say mocos has some that I

Think is pretty good or if you want to get like the whole block of vegan cheese DIA has a really good one which like the newer Dia vegan cheese is really good and then also I want to say it’s called good planet has a good one I’ll link it
