INGREDIENTS:
1 1/2 quinoa,toasted
3 cups of water
1 cup cucumbers,sliced
1 cup red radishes cut into small pieces
1/2 cup green onion,chopped
1/2 cup red onion,chopped
1/2 cup carrot,cut into julienne strips
1/2 cup fresh parsley,chopped
DRESSING:
6 tbs olive oil
3 tbs soy sauce
1 tbs ginger,grated
1 tbs garlic,minced
1/2 tsp pink salt
1/2 tsp black pepper
1/2 tsp crushed red pepper
2 tbs sesame seeds
Toast the quinoa for about 2 minutes and the water and bring to a boil.Then reduce the heat and cook for about 10 minutes.Transfer it to a large bowl and allow it to cool down.
For the dressing add olive oil,soy sauce,ginger,garlic,salt,pepper,crushed red pepper and sesame seeds to a bowl. Mix well and set aside.
To the quinoa bowl add cucumbers,green onion,red onion,carrots,red radishes and parsley. Add the dressing to the quinoa/veggies and mix well.You can chill the salad in the refrigerator for few hours before serving .Enjoy !
