Gluten Free Chocolate Zucchini Muffins

Cauliflower Soup
1 head cauliflower florets
1/2 yellow onion, chopped
4 garlic cloves
1 tbsp olive oil
2 cups broth
3/4 cup full fat coconut milk

Toss cauliflower, onion, and garlic with oil. Spread in baking dish, and bake at 375 for 35 minutes until golden. Let cool, and add with broth and coconut milk to blender. Blend until smooth.

Butternut Squash Quinoa Casserole
1/2 lb butternut squash (I used prechopped)
1 cup uncooked quinoa
1 cup frozen chopped spinach
1 egg
1 tsp garlic powder OR 3 garlic cloves
1 cup full fat coconut milk
1/3 cup shredded mozzarella (optional)

Cook quinoa according to package instructions in water or broth. Grease an 8×8 dish, and add quinoa, spinach, and butternut squash to the dish. In a small bowl, whisk together garlic, coconut milk, and egg. Pour over quinoa mixture, and stir well. Top with mozzarella if using. Bake at 375 for 30 minutes.
