2 Pork Tenderloins (2-3 lbs)
½ cup Fresh Italian Parsley Minced
2 Garlic Cloves Minced
2 Tbsp Extra Virgin Olive Oil
2 tsp Kosher Salt
1 tsp Coarse Ground Black Pepper
Sweet and Sour Sauce
¾ cup Pineapple Juice
½ cup Orange Juice
½ cup Dark Brown Sugar Packed
¼ cup Honey
½ cup Apple Cider Vinegar
3 Tbsp Ketchup
2 Tbsp Mirin
2 Tbsp Gluten-Free Soy Sauce
2 Tbsp Cornstarch
Remove the pork tenderloins from the refrigerator 30 minutes prior to cooking.
Make the sweet and sour sauce first since some of it is used to season the pork. Add all ingredients except for the cornstarch in a medium-sized saucepan. Whisk all ingredients together thoroughly. Place the pan on high heat and bring to a boil.
Dissolve the cornstarch in 2 Tbsp of water. While the mixture is boiling, add the dissolved cornstarch while whisking constantly. Lower the heat to medium and simmer the mixture for 2 minutes, whisking frequently. Remove from the heat and place on the counter to cool at room temperature for at least 30 minutes, whisking occasionally.
Remove the pork tenderloins from the package and pat dry with a paper towel. Trim any excess fat or silver skin from both tenderloins. Slice each tenderloin into 1½-inch slices (medallions).
Place the medallions in a mixing bowl. Add the garlic, extra virgin olive oil, parsley, kosher salt, black pepper and a ½ cup of the sweet and sour sauce. Massage all ingredients together with the pork medallions and let sit for 15 minutes.
Preheat the grill to 450 degrees and set up for direct cooking.
Grill the pork medallions over direct heat for 5 minutes on both sides. Remove from the grill when medallions are 145 degrees in the center.
Let rest for at least 10 minutes, loosely covered in aluminum foil. Drizzle some of the sweet and sour sauce on each medallion. Serve with additional sweet and sour sauce for dipping
