Learn how to make a delicious and healthy Cherry & Farro Salad perfect for summer!
Cherries are in season from May to July, so we really like to maximize our usage during their short & sweet season. That being said, strawberries are a great summer substitute if the cherry season has already passed. Our Vintner Pinot Noir’s classic notes of cherry complement the star fruit of this season and are naturally one of our favorite summer wines.

We made this in our test kitchen for the Arrows & Bow X Cleobella Collection. This easy salad recipe is an ideal dish for lunch or a dinner party. Enjoy the fresh flavors of sweet cherries, nutty farro, and a zesty dressing that complements the smooth, fruity notes of Pinot Noir.

Serves: 6-8

Time: 1 hour

Salad Ingredients:
4 cups chicken or vegetable broth
1 ½ cups farro
3 tablespoons olive oil
4 shallots, thinly sliced
2 cups cherries, halved & pitted
½ cup toasted walnuts chopped
4 ounces semi-soft aged goat cheese, thinly sliced
5 ounces arugula

Instructions:
Set broth in a medium-sized pan and bring to a simmer. Add farro and cook covered for 15 – 20 minutes, until farro is cooked and slightly chewy. Remove from heat and let cool.
Heat 3 tablespoons of olive oil in a large skillet over low heat, and add in shallots. Cook for 20 minutes, stirring occasionally, until the shallots are translucent. Remove from heat and let cool.
Combine the farro, shallots, cherries, walnuts, cheese, and arugula in a large bowl and toss with the dressing (recipe below).

Dressing Ingredients:
1 clove garlic
¼ cup champagne vinegar
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon ground pepper
½ cup olive oil

Instructions:
Combine garlic, vinegar, lemon juice, honey, dijon mustard, salt & ground pepper in a blender and turn on low speed. Slowly drizzle in the olive oil through the cap on the lid. Blend until smooth and creamy.
Test Kitchen Tip: We highly recommend doubling this recipe for leftover dressing, but we always keep the garlic to 1 clove because of its pungency. Shredded chicken breast or duck is a great way to add protein to this dish. A ball of creamy burrata can also be a very tasty addition.
