Here are the deets…
INGREDIENTS:
– 6 Eggs
– 3.5 Medium Bananas (or 400 gms) + 1 more for garnishing
– 1/4 Cup Coconut Oil or Olive Oil (Olive oil makes it lighter)
– 6 Dates
– 2 tsp Vanilla Essence
– 1/2 tsp Cinnamon
– 2 tsp Baking powder
– 70 gms Coconut Flour
– 20 gms Chia Seeds
METHOD:
– Line a 26cm x 10.5cm Loaf tin with baking paper. Grease it lightly with oil and dust some flour in it so the bread doesn’t stick.
– Preheat oven to 150 C or 300 F
– Soak the dates in hot water for a few minutes so they soften and can blend easily. Then squeeze out water.
– To a Food Processor add the Eggs, Bananas, Coconut Oil, Drained Dates, Vanilla Essence, Cinnamon & Baking Powder.
– Blend till smooth.
– Add Chia Seeds and Coconut Flour to the food processor and mix till combined. Leave it for 10 minutes until it’s thick.
– Pour the mixture into the Loaf Tin and Garnish with sliced banana. Add anything else you like… nuts, chocolate chips etc. Even 2 TBSP Protein powder if you like.
– Cover the top with foil to prevent burning.
– Bake for 50 minutes and check. Insert a knife… it should come out clean. If not… put it back in the oven and check after 10 minutes.
– Let it cool and cut into 12 slices.
