🍏🥕 INGREDIENTS and INSTRUCTIONS for the BREAD
Before baking❗❗ ACTIVATE❗❗ your sourdough STARTER like this:
🥕Mix approximately 100 g sourdough STARTER (https://youtu.be/FKZQPedukZg )
with
50 g of any gluten free WHOLE GRAIN flour (whole grain rice flour, oat flour, buckwheat flour, millet flour…),
50 g water and
optional 1 tsp of maple syrup, agave syrup, coconut sugar, honey… (highly recommended in colder season).
Let sit in warm place 6 hours or longer until it’s activated (has increased in size and you see bubbles…).

🥕Mix:
50 g sunflower seeds
50 sesame seeds
20 g linseeds
50 g water
🥕Mix in another bowl:
550 g water
200 g ACTIVATED sourdough (https://youtu.be/FKZQPedukZg)
20 fresh yeast
10 g linseed ground
20 g psyllium husk ground (not powder)
Let sit until it turn into a gel (30 – 60 minutes).
🥕Mix in another bowl:
300 g oat flour
50 g oats
70 g tapioca starch
70 g potato starch
10 g coconut flour (you won’t taste it)
15 g sea salt
Continue as shown in the video❗❗
50 g seeds of your choice for coating.
🥕 Let the dough rise in a warm place (around 20 – 25°C) for several hours. The bread is ready to bake when it has slightly increased in volume and the surface begins to show small cracks.
🥕BAKE with lid: 60 minutes in preheated oven at 220 °Celsius with steam (place a bowl with water in the lower section of the oven).
Take lid off and bake another 10-15 minutes at 190 ° Celsius until golden brown.
When the bread is ready, it sounds hollow when you tap it.
