these are the measurements I used, but feel free to use more or less of each ingredient. I also usually measure from the heart & adjust as I taste/go!
Required:
– seaweed noodles (100g)
– baking soda
– lemon juice (1/2 to 1 whole lemon)
– gochujang (12g)
– allulose/sweetener (small squeeze)
– kimchi (50g)
– kimchi liquid/juice (2-3 spoonfuls)
Optional:
– sesame oil (1/2 tbsp)
– soy sauce (1 serving)
– garlic (1 tbsp)
– sesame seeds (1 tbsp)
– gochugaru/korean red pepper flakes (1 tbsp)
– cucumbers (10g)
– lettuce (30g)
– green onion (10g)
1. Prep seaweed noodles by placing 100g into a bowl, add lemon juice & baking soda, then mix for a few minutes until noodles soften. If it’s not working, add more lemon juice & baking soda and mix again for a few more minutes.
2. Rinse & drain in water. Noodles will soften more.
3. Prep veges. I sliced cucumber & green lettuce.
4. Combine gochujang, gochugaru, allulose, splash of water, sliced kimchi, kimchi juice in a mixing bowl & mix. Add optional ingredients such as soy sauce, sesame oil, sesame seeds.
5. Add noodles to sauce, then add your vegetables. I added sliced green lettuce, diced green onions, & sliced cucumber! Mix.
6. Top with extra green onions, cucumbers, & sesame seeds. (optional)
7. Add protein for extra nutrients or enjoy on its own!
Seaweed noodles I get is Assi brand from the Weee! app, but they’re sold out usually so I’ve linked an alternate one in my bio!
