I always love a good single-serve recipe and this protein banana bread is so perf when you want something sweet that still makes you feel good. Soft, warm, cinnamon-spiced with melty chocolate chips and packed with 14g of plant-based protein. So cozy. Enjoy Xx
Easy recipe (single-serve):
1/2 small banana, mashed
1 tsp maple syrup
1/4 tsp vanilla extract
2 tbsp vegan vanilla protein powder
1 tbsp oat flour
1/2 tsp baking powder
1/8 tsp cinnamon
Pinch of sea salt
1/2 tbsp mini chocolate chips
A few crushed walnuts
1–2 tbsp almond milk (start with 1, add more as needed depending on your protein powder. I always have to add 2.)
Mix, pour into a greased ramekin or muffin tin, and bake at 350°F for 20–22 minutes.

220 calories | 14g protein | 28g carbs | 7g fat | 4g fiber
