INGREDIENTS –
Simple Masoor Dal –
½ cup red lentils (masoor dal), rinsed well
3 cups hot water
1 tsp turmeric powder
1 tsp salt
1 tsp oil
For tempering:
1 tbsp oil
2 dry red chilies
1 tsp panch phoron

Paneer Recipe –
400 gm paneer
2 medium-large tomatoes
½ inch fresh ginger
4 tbsp oil
½ tsp salt (for soaking)
½ cup hot water (for soaking paneer)
1 tsp ghee (optional but recommended)
1 tsp shahi jeera (or regular cumin seeds)
1 dry red chili
1 tsp turmeric powder
1 tsp Kashmiri red chili powder
1 tsp ground coriander (dhania powder)
1 tsp ground cumin (jeera powder)
2 tsp shahi garam masala

½ cup warm milk
Salt to taste
1 tsp sugar (optional)
⅛ tsp ground mace (or nutmeg)
¼ tsp kasoori methi (dried fenugreek leaves), crushed
Begun Bhaja –
1 medium eggplant
Salt to taste
A pinch of turmeric
Oil for pan-frying
