Ingredients (1 medium skillet – serves 2): – 30 g (½ cup) oat flour (or almond flour for fewer carbs) – 25 g (1 scoop) vanilla whey or birthday cake protein powder – 15 g (3 tbsp) granulated sweetener (allulose, monk fruit, erythritol) – 60 g (¼ cup) mashed banana (moisture without fat) – 113 g (½ cup) plain nonfat Greek yogurt (moisture + extra protein) – ½ tsp baking powder – 1 tsp vanilla extract – ¼ tsp butter extract (optional, for cake flavor) – Pinch of salt22 – 10 g dark chocolate chips
Instructions – Preheat oven to 350°F (175°C). – Lightly spray a 6–8” oven-safe skillet with non-stick spray. – In a mixing bowl, whisk together oat flour, protein powder, sweetener, baking powder, and salt. – Stir in mashed banana, Greek yogurt, vanilla extract, and butter extract until a smooth batter forms. – Fold in chocolate chips (and sprinkles if you want birthday cake vibes). – Spread batter evenly in the skillet. – Bake 10–12 min for gooey texture, or 14–15 min for firmer cookie. – Cool slightly, add extra chocolate or sprinkles on top, and enjoy warm.
