Recipes:

Pizza:
Ingredients:
– 2 whole grain naan or pita bread
– 1 package (10 oz) spinach, frozen and dethawed
– 1 cup baby bella mushrooms

– 2 cups low sodium/no added sugar marinara sauce
– 1/2 to 1 cup mozzarella cheese, shredded (1/2 cup per person)

Instructions
– Preheat oven to 425 degrees.
– In a high powered blender, blend together spinach, mushrooms, and spaghetti sauce. add as little or as much of the vegetables as you would like to try!
– Spread sauce on the crust.
– Top with cheese and other desired toppings
– Bake for 10-15 minutes or until cheese is melted and bubbly!

Mac and Cheese:
Ingredients:
– 1 medium butternut squash
– 2 cups whole grain macaroni
– 1 cup 1% milk
– 1 cup grated cheddar cheese
– Salt, Pepper, and Chili Powder to taste

Instructions
– Preheat the oven to 450 F.
– Cut the butternut squash in half lengthways. Scoop out the seeds and place the two halves of squash flesh side up on a baking tray. Bake in the oven for 45 minutes or until the squash is soft.
– Cook the pasta according to the package instructions.
– Once the squash has cooked, spoon 1 HALF of the butternut squash and milk into a blender or food processor. Blend till smooth.
– Drain the pasta and add the puree and cheese to the noodles plus seasonings!

Burgers:
Ingredients:

1 lb ground beef
1/2 small onion (grated)
1/2 cup baby carrots
1/2 zucchini
Garlic powder, salt, pepper to taste

1 egg (lightly beaten)

Instructions
– Place all veggies in a food processor and blend until tiny pieces
– Place all the ingredients into a large mixing bowl and mix until just combined
– Divide the mixture into 6 patties
– Cook on a BBQ or place in a frying pan until medium/medium well
