Panjiri — A Bowl of Strength, Warmth & Wellness

A traditional winter and postpartum recipe, Panjiri is nature’s way of healing and strengthening the body. Made with desi ghee, nuts, seeds, suji, gond kateera, makhana, figs, and saffron, this wholesome mix supports recovery, strengthens bones, boosts lactation, and keeps you warm through the cold months.
It’s an ancient recipe every mother swore by — full of comfort, care, and nourishment in every spoon.

Ingredients:
½ cup suji (semolina)
½ cup desi ghee
¼ cup desiccated coconut
¼ cup almonds
¼ cup walnuts
2 tbsp cashews
2 tbsp pumpkin seeds
1 tbsp flax seeds
1 tbsp sesame seeds (til)
2 tbsp gond kateera (tragacanth gum)
¼ cup makhana (fox nuts)
4–5 dried figs (anjeer) – chopped
3 tbsp desi khand (natural cane sugar) – or as per taste
A few strands of saffron (kesar) – soaked in 1 tsp warm milk
1 tsp saunf powder (optional)

Recipe Method:
1. Roast the base:
Heat desi ghee in a pan. Add suji and roast on low flame till it turns golden and aromatic. Remove and keep aside.
2. Fry nuts & seeds:
In the same ghee, lightly fry almonds, walnuts, and cashews. Then add pumpkin, flax, and sesame seeds — roast till fragrant.
3. Add coconut & makhana:
Add desiccated coconut and roast till lightly golden. Fry makhana till crisp, then crush coarsely.
4. Prepare gond:
Add a little more ghee, fry gond kateera till it puffs up fully. Crush it once cool.
5. Combine everything:
Grind nuts, seeds, figs, and saffron lightly — just to break them.
Now mix together suji, makhana, gond, ground mixture, desi khand, and saunf powder.
6. Cool & store:
Let the Panjiri cool completely. Store in an airtight jar for up to 2–3 months.
