5-Veggie Hidden Sauce (Batch Recipe)
This recipe is designed to make a big batch of sauce that is intensely flavorful, healthy, and easily freezable. Perfect for loading up on vegetables without compromising taste!
Did you know: Tomato sauce only became a widely accepted ingredient in Italian cuisine in the 17th century, following the introduction of the tomato plant from the Americas. Before this, pasta was typically eaten dry or with cheese and herbs.

INGREDIENTS (Makes approx. 1 Litre of Sauce, 4 Servings):
• 1 tbsp Olive Oil (approx. 14g)
• 1 medium Onion (approx. 150g), chopped
• 2 sticks Celery (approx. 80g), chopped
• 2 medium Carrots (approx. 120g), chopped
• 1 medium Red Bell Pepper (approx. 150g), chopped
• 1 medium Zucchini (Courgette) (approx. 150g), chopped
• 3 cloves Garlic, minced (or as much as you need)
• 1 can Chopped Tomatoes (approx. 400g)
• 100 ml Vegetable Stock or Water (optional, for simmering)
• Salt and pepper to taste

NOTES:
Batch Prep: This sauce freezes beautifully. Divide it into individual containers for quick weeknight meals.

INSTRUCTIONS:
1. Sauté: Heat the olive oil in a large pot or saucepan. Add the chopped onions, celery, carrots, red bell peppers, and zucchini. Cook over medium-low heat for about 10 minutes until the vegetables are soft and translucent.
2. Season: Add the salt and the minced garlic. Cook for 1 minute until fragrant.
3. Simmer: Stir in the canned chopped tomatoes and the optional 100 ml of stock or water. Mix well, bring to a simmer, then cover and cook on low heat for 15 minutes to let the flavors deepen.
4. Blend: Remove the sauce from the heat and blend it using an immersion blender or standard blender until completely smooth and creamy.
5. Finish: Toss the blended sauce with your cooked pasta, adding a small amount of the starchy pasta water to emulsify the sauce and help it cling perfectly to the pasta.
