🥗 Ingredients
For the Salad:🌟
• 1 cup cucumbers, sliced or diced
• 1 cup tomatoes, halved
• 1/2 cup onions
• 1 cup spinach
• 1 cup bell peppers (any color), chopped
• 1 cup steamed broccoli florets
• ½ cup cooked beans (kidney, black, or chickpeas)
• ½ cup crispy roasted chickpeas (for crunch)
• A handful of fresh mint or cilantro, chopped (optional)
For the Dressing:🌟
• 2 tbsp olive oil
• 1 tbsp vinegar
• 1 small garlic clove, minced
• Salt & black pepper, to taste
• Parsley & oregano
For Roasted Chickpeas: 🌟
• Olive oil
• 1 tbsp Cumin
• 1 tbsp Crushed red chilli
• 1/2 cup boil chickpeas
• 1/2 tsp turmeric
• 1/2 tsp cumin powder
• 1/2 tsp sumac (Arabic masala)
• 1/2 tsp parsley
• 1/2 tsp vinegar
• 1/2 tsp salt
