NOTE: All recipes/macros listed are for 1 serving. Feel free to multiply servings by 2/3/4 for meal prep!

CHOCOLATE COVERED BANANA BAKED OATS
Nutrition: 463 cals, 30P, 62C, 12F

Ingredients:
50g oat flour
10g unsweetened cocoa powder
90g nonfat Greek yogurt
1 egg
50g egg whites
20g chocolate chips
50g sliced banana
30g monkfruit sweetener
2g baking powder
1 tsp vanilla extract
Top with sea salt

Bake at 400F for 25 mins (if using glass container. For cast iron skillet, bake 17-18 mins)

CINNAMON ROLL PANCAKES
Nutrition: 563 cals, 51P, 63C, 10.5F

Ingredients:
60g all purpose flour
170g light cottage cheese
90g egg whites
1 egg
15g sugar free maple syrup
4g baking powder
3g cinnamon
4ml vanilla extract

Filling (swirl in the middle of each pancake):
-50ml unsweetened applesauce
-20g brown monkfruit
-2g cinnamon

Frosting:
-60g nonfat greek yogurt
-20g swerve powdered sugar
-3ml vanilla extract

CHOCOLATE CHIP PANCAKES
Nutrition: 549 cals, 41.5P, 60C, 12F

Ingredients:
60g all purpose flour
170g light cottage cheese
90g egg whites
1 egg
15g sugar free maple syrup
4g baking powder
3g cinnamon
4ml vanilla extract
10g mini chocolate chips

FRENCH TOAST STICKS
Nutrition: 358 cals, 35P, 43C, 9F

Ingredients:
3 slices white bread (mine were 65 cals each)
75g egg whites
1 egg
30ml fairlife skim milk
2ml vanilla extract
15g powdered PB
15g monkfruit sweetener
3g cinnamon
Coating: Monkfruit + cinnamon
Dip in sugar free maple syrup (optional)

60g quick oats
10g unsweetened cocoa powder
5g Jell-O fat-free chocolate pudding mix
15g monkfruit sweetener
100ml Fairlife skim milk
150g nonfat Greek yogurt
Pinch of salt
50g sliced bananas

Chocolate ganache:
50g nonfat Greek yogurt
5g unsweetened cocoa powder
2g Jell-O fat-free chocolate pudding mix
5g monkfruit sweetener
15–20ml Fairlife skim milk
Sliced bananas

*Store in fridge for 3+ hours, or overnight*

STRAWBERRY SHORTCAKE OVERNIGHT OATS
Nutrition: 457 cals, 42P, 52.5C, 9F

Oats:
60g quick oats
5g graham cracker crumbs
5g Jell-O fat-free white chocolate pudding mix
15g monkfruit sweetener
100ml Fairlife skim milk
150g nonfat Greek yogurt
Pinch of salt
3ml vanilla extract
50g finely chopped strawberries

Ganache:
50g nonfat Greek yogurt
5g Jell-O fat-free vanilla pudding mix
5g monkfruit sweetener
15–20ml Fairlife skim milk
Sliced strawberries
Sprinkle of graham cracker crumbs

*Store in fridge for 3+ hours, or overnight*
