For assorted idli batter
Idli rava (इडली रवा) – 3 bowls
Black gram lentil / urad dal (उडीद डाळ) – 1 bowl
Thick poha (जाड पोहे) – 1/2 bowl
Fenugreek seeds (मेथी दाणे) – 1 tsp
Salt (मीठ) – to taste
Carrot grated (गाजर किसलेले) – as needed
Beet grated (बीट) – as needed
Bell pepper chopped (ढोबळी मिरची) – as needed
Spinach chopped (पालक) – as needed

For chutney
Green chillies (हिरवी मिरची) – 2
Peanuts (शेंगदाणे ) – 1/2 bowl
Fresh coconut (ओला नारळ) – 1 bowl
Garlic (लसूण) – 2 cloves
Ginger (आलं) – 1 inch
Curry leaves (कढीपत्ता) – 7–8
Coriander (कोथिंबीर) – 1 bowl
Lemon juice (लिंबाचा रस) – 1 tsp
Cumin seeds (जिरे) – 1 tsp
Mustard seeds (मोहरी) – 1 tsp
Asafoetida (हिंग) – pinch
Oil (तेल) – 1 tsp
Salt (मीठ) – to taste

• Wash and soak idli rava separately for 3–4 hours
• Wash and soak urad dal, poha, methi together for 3–4 hours
• Grind dal mixture to smooth paste
• Mix with soaked rava, add salt, ferment overnight
• Before steaming, mix grated vegetables into batter
• Steam idlis till cooked
• Grind all chutney ingredients with water
• Give tadka with oil, cumin, mustard, hing and add to chutney

• इडली रवा वेगळा धुवून 3–4 तास भिजत ठेवा
• उडीद डाळ, पोहे, मेथी एकत्र भिजवा
• मिक्सरमध्ये बारीक वाटा
• रवा मिसळा, मीठ घाला, रात्रभर आंबवा
• वाफवण्याआधी भाज्या मिसळा
• इडल्या वाफवून घ्या
• चटणीसाठी सर्व साहित्य वाटा
• फोडणी करून चटणीत घाला
