RECIPE for Sour Dough:
*This recipe is for two loaves. Feel free to cut in half for one loaf.
-600g water
-20g olive oil
-200g active sourdough starter
-Mix or whisk above ingredients together until starter is mostly distributed throughout the water
-950g flour
-20g salt
-Mix together and knead/stretch and fold the dough until no dry bits remain Cover, and let sit at room temp for 20-30 minutes. Stretch and fold your dough over into itself. Repeat this 2 more times, for a total of 3 stretches and folds over about 1-1 & 1/2 hrs
-Leave to sit on your counter top until doubled in size. Could take 4-8 hrs depending on temp of house
-Dump onto countertop, and shape into
loaves as in video. Place into lightly floured proofing basket, and cover.
-Refrigerate for 8-36 hrs. The longer your proof in the refrigerator, the more sour the taste.
-Preheat oven to 450f with a Dutch oven inside for 1 hour. Pull dough out of fridge and flip over onto a parchment sheet. Score as desired.
-Carefully place into Dutch oven, cover, and bake for 30 minutes. Take off lid, reduce heat to 425f, and bake for 5-15 more minutes until your bread is a lovely golden brown. Allow to cool and ENJOY!
-Store in an airtight container for 3-5 days, or freeze a loaf for up to two months.
