Edamame wraps:
2 cups frozen edamame, thawed
1/2–3/4 cup mozzarella, grated
Toppings
1 avocado, mashed
2 eggs
Chilli oil crisp
Sesame seeds
Chopped chives
Chopped coriander
Method
1. Preheat oven to 180°C (fan-forced) and line a tray with baking paper.
2. Spread edamame into 3 flat rounds on the tray.
3. Sprinkle each with mozzarella.
4. Bake for 12–15 minutes until golden and crisp around the edges.
5. Let cool slightly before peeling off the paper.
6. Top with mashed avocado, a fried egg, chilli oil crisp, sesame seeds, chives, and coriander.
