Sourdough Bread
I start this at 2:30 in the afternoon
100 grams of active starter
350 grams warm filtered water
500 grams flour
10 grams salt
Mix the starter with the warm water. Then add the flour and salt. I mix well with a wooden spoon. Cover and set in a warm place for 1 hour. Then every 30 minutes 4 times stretch and fold. At 5:30 or 6:00 I cover and leave to raise until 9:00 at night. I shape into a round loaf and place in a bowl lined with parchment paper and let rise until 10:30. I then cover with a damp muslin and place in the refrigerator overnight. In the morning I get out and let warm up on the counter for an hour. Next I place my Dutch oven in the oven and heat until 475 degrees. I place the loaf in the Dutch oven and cover it with the lid and bake for 30 minutes. Next I take it out and remove the lid and set the oven temperature to 425 and bake for 15 minutes or until nice and golden brown. Remove it from the Dutch oven and let cool on a wire rack.
