PUTTANESCA BEAN ORZO. Want to know the secret behind eating healthy? It’s adding beans to everything. Here I’ve simmered them with tomatoes, chilli, garlic, anchovies and capers before stirring through orzo to make a Mediterranean style dinner that’s delicious and filling.
RECIPE
1 tbsp olive oil
1 red onion, finely chopped
2 garlic cloves, crushed
1/2 tsp chilli flakes
400g chopped tomatoes
5 anchovy fillets plus drizzle of oil
90g pitted black olives, chopped
2 tbsp capers
300g orzo
1 tin cannellini beans, drained and rinsed
Parsley and parmesan, to serve
1. Add a drizzle of oil from the anchovy tin to a large frying pan then add red onion. Fry gently for 5-10 mins until softened but not brown.
2. Add crushed garlic, chilli flakes and anchovy fillets to pan. Cook for 3-4 mins until starting to disintegrate.
3. Add chopped tomatoes to the pan and simmer for 5 mins until reduced slightly and starting to thicken.
4. Cook orzo to 1 min less than packet instructions so it’s slightly al dente then drain.
5. Add olives, capers, white beans and orzo to the pan with plenty of black peppers. Give it all a good stir and simmer for 4-5 mins.
6. Serve with a grating of Parmesan and some chopped parsley.
