**Sautéed Veggie Quinoa (Simple & Flavorful) **
**Ingredients (Serves 2-3)**
* 1 cup quinoa
* 2 cups water
* 1 cup mixed vegetables (carrot, beans, peas, bell peppers, corn – your choice)
* 1-2 tbsp butter (or olive oil)
* 2-3 cloves garlic (finely chopped) *(optional) *
* 1 small onion (chopped) *(optional) *
* Salt to taste
* ½ tsp black pepper
* ½ tsp cumin powder *(optional) *
* ½ tsp chili flakes or green chili *(optional)*
* Fresh herbs (parsley/coriander) for garnish
* Lemon juice (optional, for freshness)
**Instructions**
1. **Soak & Rinse**
Soak quinoa for at least 2 hours. Rinse it thoroughly 3-4 times under running water to remove bitterness.
2. **Cook Quinoa**
In a pot, add quinoa and 2 cups water.
Bring to a boil, then simmer for 10-15 minutes until water is absorbed.
Fluff with a fork and set aside.
3. **Sauté Vegetables** Heat butter in a pan.
Add garlic and onion (if using), sauté until fragrant
Add vegetables and cook for 4-5 minutes until slightly tender.
4. **Season**
Add salt, black pepper, cumin powder, and chili flakes. Mix well.
5. **Combine**
Add cooked quinoa to the pan.
Mix everything thoroughly and cook for another 4-5 minutes so flavors combine.
6. **Finish & Serve**
Add fresh herbs and a squeeze of lemon juice (optional).
Serve hot with your favorite salad.
###**Tips**
* For extra protein, add tofu, paneer, or chickpeas.
* For a richer taste, use a mix of butter and olive oil.
* You can skip soaking if you rinse quinoa very well.
