Bruschetta is a classic Italian-style appetiser made with toasted bread topped with a fresh tomato mix. This version uses juicy cherry tomatoes, garlic, basil, and lemon for a sharp, fresh, slightly sweet topping sitting on crispy sourdough. Simple, quick, and full of punchy flavour.
Ingredients:
For topping:
Cherry tomatoes – 250 g (halved or chopped)
Olive oil – 1 tsp
Garlic – 2 tsp (shredded or finely chopped)
Onion – 1 (finely chopped)
Salt – to taste
Mixed herbs – to taste
Chilli flakes – to taste
Sugar – 1 tsp
Lemon juice – 1.5 tsp
Fresh basil leaves – a handful (torn)
For bread:
Sourdough bread slices
Oil – 1 tsp (for toasting)
Procedure:
1. Make the tomato mix
In a bowl, add:
Cherry tomatoes
Onion
Garlic
Basil leaves
Now season it with:
Olive oil
Lemon juice
Salt
Mixed herbs
Chilli flakes
Sugar
Mix everything well and let it sit for 10–15 minutes so the flavours combine and the tomatoes release their juices.
2. Toast the bread
Heat a pan or grill
Brush sourdough slices lightly with oil
Toast until golden and crispy on both sides
3. Assemble
Spoon the tomato mixture generously over hot toasted sourdough
Make sure to include some of the juices for extra flavour
4. Serve
Serve immediately while the bread is still crisp so it doesn’t go soggy
