Hello!! Today I show you guys 5 easy and quick (as well as cheap) vegan sandwich ideas! These are great for college students or anyone else short on time. They can be made ahead of time (meal prep) and assembled the day of! Subscribe for more content coming every Wednesday and Sunday!

ONE: Chickpea Sandwich
-in a bowl, mix together half a can of drained chickpeas, chopped celeri and chopped radish.
-season to taste (I used salt, pepper, onion+garlic powder and paprika) and add in some mayo to bind everything

TWO: Roasted Vegetable Wrap
-on a baking pan, place slice eggplant, zucchini and red onion
-drizzle with olive oil and salt. Bake at 400 for 30 minutes
-grab a pita, slater on some hummus and put the roasted ved
-roll it up and enjoy, this one is my absolute favorite!

THREE: Tofu Scramble Sandwich
to make the tofu scramble:
-scramble half a brick of tofu by breaking it with a fork in a bowl, set aside
-pan fry some mushroom with some olive oil on medium-high heat
-once the mushrooms are nice and brown, add in your tofu and cook further more
-add in salt, pepper, onion+garlic powder, turmeric and nutritionnal yeast to taste!
-stuff it in your bun and enjoyyy

FOUR: BLT
my super quick tofu bacon:
-slice half a brick of tofu into thin slabs
-fry them in some olive at medium heat
-one both sides are nice and brown, sprinkle on onion+garlic powder
-splash on some soy sauce and reduce heat to low
-let thicken for 2 minutes and remove from heat
-to build your sandwich, simply dress your bread with mayo, add in lettuce, tomato and your tofu pieces!

FIVE: smoked tofu wrap with peanut sauce
for the peanut sauce, i used sweetsimplevegan’s recipe:
for the picked veg:
-in a mason jar, i added some sliced radish and mathstick carrots
-pour in some white vinegar (or other type of vinegar), add half teaspoon sugar and full teaspoon of salt. Shake slighty and set aside
sandwich:
-slice a pita in half and open it carefully
-insert pieces of smoked tofu, lettuce and other veg you like (ie: red cabbage)
-when read to eat, add in our pickled veg, dip in sauce and enjoy!
