This rajgira thepla is my go-to when I want
🌿 Rajgira (Amaranth) Thepla for Toddlers & Family
Ingredients:
* 1 cup rajgira (amaranth) flour
* 1 small potato (semi-boiled & grated)
* ½ tsp jeera (cumin seeds)
* Small piece of ginger
* Fresh coriander leaves
* ½ green chilli (optional, adjust for kids)
* Salt to taste
* A pinch of hing
* 1–2 tbsp hot water (if needed)
* Ghee for cooking
Method:
1. Grind together ginger, jeera, coriander, and green chilli into a coarse paste. Keep aside.
2. In a bowl, add rajgira flour, the prepared paste, grated semi-boiled potato, salt, and hing.
3. Mix everything well.
4. If the dough feels dry, add 1–2 tbsp hot water gradually and knead into a soft dough.
(Tip: Avoid fully boiling the potato, as it can make the dough too sticky and difficult to roll.)
5. Roll into small theplas/parathas.
6. Cook on a hot pan from both sides until golden.
7. Apply ghee and serve hot with curd.
