It’s time for another DELICIOUS meal from VP’s kitchen!

This time I am experimenting with a new way of filming – I know it’s a little rough around the edges and next time I will use my better camera – but I am still excited about experimenting! Let me know what you think!

This is a FANTASTIC and incredibly easy #vegan, gluten-free version of the traditional Italian dish Robollita. There are so many options in this dish and you can play around with it as you please. If you watch the video all the way through, you will hear some of my suggestions!

INGREDIENTS:

4 servings:

1 yellow onion
3 stems of celery
1 carrot (not in video)
3 cloves of garlic
1/4 fennel
2 tbs olive oil for cooking
2 bay leaves
1/2 table spoon chili flakes
1/2 tablespoon paprika powder
400 g (1 can) diced tomatoes
500 ml vegetable stock (or water)
100 g lentils
115 g barley
100 g cabbage

180 kcal per serving
8 g fat
25 g carbohydrate
7 g sugar
5 g protein
