Hash Browns
3 medium potatoes shredded
1/2 bell pepper diced
1/4 onion diced
1 cup spinach chopped
1/2 tsp ea garlic powder, salt, paprika
Mix together all ingredients in a bowl and place on a griddle pan. Let cook for 15 minutes. You can also cook these in the oven on 400 degrees for 20 minutes (or until browned).

15-20 pitted Medjool dates*
1/4 cup cocoa powder
1 tsp peppermint oil
*If your dates are very dry soak them for an hour and drain off the liquid before using
In your blender combine all of your ingredients, process until combined. Take 1 tbsp of the dough and form into a ball, roll in extra cocoa powder. Continue until all the dough is used and place in an airtight container in the freezer.
Tempeh marinade –
1 tbsp miso
2 tbsp maple syrup
1/2 tsp ginger & garlic powder
3 tbsp coconut aminos
1 tbsp rice vinegar
Mix together the marinade and pour over tempeh/tofu. I always cut my tempeh/tofu into small blocks before I marinate it and then cook in my air fryer for 10 minutes on 300 degrees when I want to eat it.
