In this current situation we are all facing; wasting food is the last thing I want to be doing, so I am finding tasty ways to utilise items of food in the fridge which need to be used.
This week, with the intention of eating healthy salads every single day, I found I had a whole round lettuce going spare. So here is my take on “Lettuce Soup”.
This can be served hot (delicious) or chilled like a lettuce gazpacho.
Add mint for a taste of freshness or for a more salty/savoury taste serve a few chunks of pan-fried halloumi cheese!
