We are using Moong Lentils for this soup. Moong Lentils are very good for health. It is low in calories, high folate, Manganese and Magnesium. It helps in reducing blood pressure. It can be used as rasam – sambar and wered with Dosa. I am serving it with Sorghum Dosa and Mango pickles.
Ingredients:
1 Cup Moong Dal (No skin) Soaked in cold water for 20 mts.
1 Tbs Olive Oil
1/2 Onion chopped fine.
1/2 ts cumin seeds
1 ts kosher salt
1 small potato (peeled and cut into 1/2″ pieces)
1 Tbs ginger garlic turmeric paste
1/2 cup tomato sauce (or 1 fresh tomato)
2 Cups water
1 Cup vegetables (celery, carrots, peas etc.)
1/4 ts garam masala
1 ts Pav bhaji masala
Method:
Heat Olive oil in a Pot and add cumin seeds. Cook 1 minute.
Add Ginger Garlic Paste and Onion. Cook 2 minutes.
Add Tomato Sauce. Add Vegetables.
Add Pav Bhaji masala.
Now ad rinsed lentils and cook for 2 minutes.
Add 2 cups water and salt.
Bring to a Boil and let it simmer for 20 mts.
Finish with 1/4 ts garam masala.
Serve as soup or side dish with any food, rice, chapati, naan, or Dosa.
I served with Sorghum Dosa.
