ACAI BOWL

2 acai packets ( i got mine form trader joes
If you dont have this you can use 2 frozen bananas and toss in some berries.)
1 small frozen banana and a littlr apple juice ( about 1/4 cup)
Blend & top with toppings of your choice. I used coconut flakes, strawberries, and granola.

VEGAN MEATBALL SUB HERO

Saute 1 small yellow onion in skillet with a little oil add 1 tsp of garlic towards the end. then add jar of pasta or marinara sauce and a splash of hot sauce. Cover and bring to a simmer then add in frozen meatless meat balls ( i used gardein italian meatballs). cover and let simmer for 1-20 mins. Once done take for bread rolls ( hoagie rolls) and line on a pan place 3 meat balls each inside the bread rolls and top with vegan cheese. ( i used vegan daiya mozzerella and follow your heart parmesian cheese.)

QUINOA AND BEET SALAD WITH DIJON DRESSING

roast 1 beet. add 1/2 tsp oil and massage beet warp in foil and bake at 400 for 45 mins.
Make quinoa mix ( iused trader joes brand multi blend quinoa)
Make dijon dressing. 2 TBS agave, 3 TBS dijon mustard, 1/4 cup white vinegar, 1/4 tsp sea salt, 1/4 tsp garlic powder, 1 tsp zaatar seasoning, 1 tsp lemon juice & 1 TBS olive or grape seed oil.
