Very healthy and quick wonderful salad, either could have as a main salad or a side. Preparation is simple and even could be refrigerated.

Serves – 2 people

cooking time – 8 to 10 minutes

Ingredients

125g Twisted Fusilli or Pasta
75g Pitted Black olives
2 to 3tbsp extra virgin olive oil
1/2 Chopped Onion
1 tbsp Chopped parsley
2 to 3 tbsp double (thick) cream
1 tbsp or 1/2 Lemon Juice

1/4 tsp or to taste Pepper
1 or 2 tsp salt or to taste

Our Basic Rice Porridge

***** Please note:
– Do not overcook the pasta. It should be tender but firm to the bite.
– Rinse and drain well, should not leave any water.
– Do not overcook the onion or caramelise it, onion has been cooked just to sweat. And make sure to add the extra oil to blend.
– If you want more olives you could chop some extra and adding to the salad
– Eating this salad cool much batter than warm or hot. The flavour and consistency is matters for any healthy food.
– Add extra parsley for more flavour.
