Scientifically, there are three parts to a carb: sugar, starch, and fiber. When people mention complex carbs, they are talking about when you eat a WHOLE food. When they mention a simple carb, it is referencing a processed option because it has already been broken down for you and ends up raising your blood sugar level faster—in some cases, too fast.
