Throw a summer get-together with this fabulous recipe called Corn Upma!
Ingredients:
Sweet corns / sweet corn kernels: 3 medium bowls
Chopped cauliflower / Gobi: 1 small cup
Chopped carrots: 1 small cup
Greens peas: 1 small cup
Chopped onions: 2 big onions
Chopped green chilies: 10
Chopped dry fruits (as required)
Tadka ingredients (urad dal: 3 tsp (teaspoons), chana dal: 3 tsp, jeera / cumin seeds 1 tsp, mustard seeds: 1 tsp)
Haldi / turmeric powder: ¼ tsp
Curry leaves
Chopped coriander leaves
Salt
Procedure:
Take sweet corn kernels (3 medium bowls) and wash them properly
In a mixer jar, add sweet corns (3 medium bowls), green chilies (3) and grind to make a paste
Do not add water
Add salt and grind again till you get a smooth and thick paste.
In a kadai, add 4 tablespoons (tbsp) of oil and heat
Add tadka ingredients (urad dal: 3 tsp (teaspoons), chana dal: 3 tsp, jeera / cumin seeds 1 tsp, mustard seeds: 1 tsp)
Let the mustard seeds splutter
To the tadka ingredients, add chopped dry fruits
Cook till the urad dal and chana dal turn golden
Add chopped onions (2), green chilies (10) and curry leaves
Sauté and add cauliflower / gobi (1 small cup), chopped carrots (1 small cup) and green peas (1 small cup)
Sauté the contents and add salt
Mix well and cover with lid to cook
Stir intermittently and add oil (2 tbsp)
Sauté and cover with lid to cook
Cook till the onions turn light golden
Once the onions turn light golden, add the sweet corns paste, turmeric powder (1/4 tsp) and salt
Mix well
Add water (1/2 glass) and mix well
Cover with lid and let it cook
Stir intermittently
Cover with lid and cook for 10 minutes
Transfer the Corn Upma into a serving plate
Garnish with chopped coriander leaves
Corn Upma is ready to be served
