CHICKEN PITA SANDWICHES by EVERYTHING BUT PASTA (RECIPE BELOW!)
I N G R E D I E N T S :
2 chicken breasts cut into ½ in cubes
1 tbsp of ginger garlic paste
½ tsp salt
1 ½ tbsp tandoori masala powder
1tsp cumin seeds
¾ cups of yogurt
6 pita pockets, cut in half
Garnish:
2 carrots, shredded
1 english cucumber, shredded
1 iceberg lettuce, shredded
Hot sauce, optional
D I R E C T I O N S :
Combine the chicken, yogurt, ginger/garlic paste, salt and tandoori masala. Mix until well combined. Cover with plastic wrap and refrigerate for 2 hrs or up to 8 hrs.
On medium heat in a pan, add the oil and cumin seeds.
When the cumin starts popping, add the chicken and stir to mix well. Cook on medium heat for about 20 mins or until all the water has evaporated and the chicken is thoroughly cooked and dry. Now transfer to a plate.
To assemble the sandwiches, start by adding the garnish to the pita pocket and then add a generous portion of chicken. Drizzle some hot sauce, if using. Finish the sandwich by adding some more garnish.
If not serving immediately, wrap the sandwiches in plastic wrap to keep them from drying out.
