Ingredients : for 1 sandwich
2 slices of bread
1/2 Bell peppers sliced (colour of your choice )
1/2 onions thinly sliced
1/2 zucchini thinly sliced
1/2 half tomato sliced
1/2 carrot peeled to make ribbons
1/2 halloumi cheese
1 cheese slice
Salt and pepper to taste

Mediterranean sandwich was inspired by our love for Mediterranean sauce hummus, garlic sauce and halloumi cheese all put together in a sandwich with some stir fry vegetables makes a fantastic meal either suited for a lunch take away or dinner. This is to simplify cooking for those busy bees who are highly dependent on restaurant take aways / sandwich joints or outside food. It is easy to make this, takes very little time, a much healthier choice of food and can be assured with the standard of products such as oil/cheese/vegetables being used ( as you are the controller of the standard of raw things being purchased from the supermarket) it is fresh and definitely a more hygienic choice especially during these coronavirus period (covid period). It is healthy because it is not a plain white bread although this can be made in plain white bread as well, but also because of the amount of vegetables being layered into this sandwich along with protein rich cheese (halloumi). Its is a vegetarian sandwich with absolutely no form of meat or egg. I promise you it will makes a huge difference in the way you look at vegetarian sandwiches once you eat this.
