This is an easy, no-bake, no-gelatin, healthy blueberry cheesecake lower in calories and fit even for breakfast! It’s light, refreshing and creamy. A healthier recipe with low-fat cheese and little sweetener added. The cheese and cashews are a source of protein and the oats and chia seeds give extra fiber.

Ingredients:
for a smaller cheesecake (4 slices). For an 8-inch cheesecake, just double the recipe!
FOR THE CRUST
3 tbsp of fine rolled oats
30 g of crushed cashews
3/4 tbsp of applesauce
3/4 tbsp of date nectar
1/2 tbsp of coconut flour
water as needed (1/3 tbsp)
FOR THE FILLING
100 ml of whipping cream (I used sweetened with vegetable fat)
200 g of low-fat cheese (I used 1,8% one)
1 tsp of vanilla sugar
1/2 tbsp of lemon juice
1 tbsp of xylitol
FOR THE TOPPING
60 g of fresh blueberries
2 tbsp of water
1/2 tbsp of lemon juice
1/2 tbsp of date nectar
3/4 tbsp of chia seeds
Notes:
Substitute the date nectar with other liquid sweetener of choice. Substitue xylitol with other low-calorie sweeteners. Note that the cheesecake will not be overly sweet but I did use sweetened whipping cream so if using an unsweetened one, you may need a bit more sweetener. Be careful when taking out and cutting, it is moist and delicate.
For this amount of ingredients, you get around 240 calories per slice (4 slices).
