Ingredients
1.5 cup rice
water as required
masala paste
1/2 cup mint leaves
1/2 cup coriander leaves
1.5 tbsp ginger garlic paste
4-5 green chilies
salt to taste
1 tsp red chili powder
1 tsp garam masala
1/2 tsp biryani masala
2 tbsps oil
1 tbsp butter/ghee
2 bay leaves
1 inch cinnamon
5 cloves
1 large onion, sliced
1 large carrot, chopped
8 french beans, chopped
1 large potato, diced
Method
Soak 1.5 cups washed rice in water for 1 hour
blend 1/2 cup mint leaves, 1/2 cup coriander leaves, 1.5 tbsp ginger garlic paste, 4-5 green chilies, salt to taste, 1 tsp red chili powder, 1 tsp garam masala, 1/2 tsp biryani masala
keep aside
In a pressure cooker add 2 tbsp oil and 1 tbsp butter
once butter melts add 1 large onion, sliced and cook until tender
now add in 1 large carrot – chopped, 8 french beans – chopped, 1 large potato – diced and cook for 2 mins
added blended green masala paste and sauté for 2 mins
now add soaked rice and 3/4 cup water
mix well
close the lid
cook on high flame until pressure is released
once pressure is release, place pressure regulator weight
and cook 12 mins on low flame
turnoff the flame after 12 mins
tasty mint pulao is ready
Serve directly or with raita
