This is an easy recipe that uses Shirataki Noodles, chicken, and various vegetables to make 5 prepared meals for the week. Shirataki Noodles are Japanese noodles made from konjac yam or elephant yam. They are mostly made of water and glucomannan and these noodles are extremely low in calories – about 10 calories per serving. This allows you to eat a larger amount and feel more satiated and full.
I stir-fry chicken, egg plants, mushrooms, broccoli, and peppers then mix with the shirataki noodles to make a healthy and filling five day meal prep.
