Ingredients:
• 2 tbsp (16g) plain flour
• 2 tbsp (16g) unsweetened cocoa powder
• 2 tbsp (14g) stevia
• 1/2 tsp (2g) baking powder
• 1 tsp (5ml) 0% fat yogurt
• 2 tbsp (30ml) unsweetened almond milk
• 1/2 tsp (2.5ml) olive oil
Frosting:
• 2 tbsp (30g) Philadelphia lightest
• 1 tbsp (8g) icing sugar
• 1 tsp unsweetened cocoa powder (3g)
Instructions:
1. Mix all the brownie ingredients together in a mug until smooth and lump free.
2. Microwave for 60-90s or until a toothpick inserted into the centre comes out clean. (For reference, my microwave is 700W and it took 90s).
3. Make the frosting my mixing the cream cheese, cocoa powder and icing sugar.
4. Let the brownie mug cake cool for 1 minute then add the frosting and top with sugar free sprinkles, enjoy!
