This easy High-Protein Summer Salad is the BEST thing ever for a warm summer day.

This recipe is amazing on its own but it pairs beautifully on top of a bed of greens or in a sandwich.

Ingredient list: ​

1kg of boneless skinless chicken breasts or rotisserie chicken ​
2 stalk celery, diced​
1 cup red grapes, quartered​
1 cup green apple ​
1/2 cup Red onion, finely chopped ​
2 tablespoon chopped parsley​
1/2 cup of sliced almonds ​

Sauce: ​
1/2 cup of extra light mayonnaise ​
1 cup of high protein yogurt (Skyr)​
2 Tbsp of dill ​
2 Tbsp of lemon juice​
2 Tbsp of balsamic vinegar ​
Salt and pepper, to taste ​
