Ingredients:
2 slices of gluten-free bread (or regular if you aren’t coeliac/intolerant)
2 scrambled eggs
1 tomato, sliced
handful of arugula

For the avocado mixture:
1/2 avocado
1/4 cup low fat Greek yoghurt (use lactose-free if needed)
pinch of salt
pinch of pepper
•
1. Toast the bread
2. Mix the ingredients of the avocado mixture together
3. Spread it on top of one of the toasts
4. Add the scrambled eggs, arugula and sliced tomato. Enjoy!
