Ingredients:

5 large eggs
1/2 cup grated Parmesan cheese
4 large slices of pepperoni
4 slices of cheddar cheese
1/2 medium onion

Garnish with wilted kale, capers, sundries tomatoes, and drizzle with balsamic vinegar.

Instructions:

Preheat the oven to 300°F.

Beat the eggs in a bowl and add the grated cheese. Mix well.

Toss the pepperoni slices into a pan and crisp

Pour the egg mixture onto the pepperoni and cook on medium heat for 60 seconds to allow the eggs to begin cooking.

Add diced onion and cook for another 30 seconds

Put the pan into the oven and Bake for 10-15 minutes or until the egg is set and the cheese is melted.
