Homemade and delicious Apple Cinnamon Oatmeal cups! This recipe makes one oatmeal cup, but up to four can be cooked in the Instant Pot at a time.
Baked oatmeal has a completely different texture than regular oatmeal–it’s thicker and heartier, and often needs a little milk poured into it before reheating. The egg in this recipe helps to get that thick cake-like texture.
Ingredients:
-1/2 cup oatmeal
-1/3 cup almond milk or coconut
-1/4 tsp baking powder
-1/4 tsp cinnamon
-1/2 tsp vanilla
-1 tsp maple syrup (optional)
-1 egg
-1/4 cup diced apples
Directions:
1. Combine all the ingredients in a coffee mug. Mix well so that all the oatmeal is wet.
2. Add 2 cups water in the Instant Pot insert and place the trivet on the bottom. Place the coffee mug in the Instant Pot and lock the lid into place closing the pressure valve. My Instant Pot was able to hold 4 coffee mugs.
3. Cook on high pressure using the manual setting for 10 minutes. When the done, turn the Instant Pot off and let the pressure release naturally. Remove the mug from the Instant Pot. Be careful, they will be hot.
4. Serve while warm, or take with you on your way out of the house.
