No-Bake Matcha Energy Balls:
Ingredients:
1/2 cup dates, pitted
3 tablespoons shredded almonds
1/2 teaspoon vanilla extract
1 tablespoon matcha powder
Directions:
In a food processor (or just use your hands if you dont want super smooth paste) pulse the pitted dates with shredded almonds and vanilla extract until well combined to get a sticky paste.
Using your hands, form the mixture into evenly sized balls. Ensure that the paste has a slightly sticky consistency so that it remains soft even after being refrigerated overnight. If it is not sticky enough, incorporate additional liquid or moist ingredients.
Pour the matcha powder onto a plate and roll each energy ball in the powder until they are evenly coated.
Place the energy balls in an airtight container and refrigerate for at least 30 minutes to allow them to firm up.
