Today i am going to Show You How to Prepare Fresh & Healthy SALAD for DIABETICS People.

For This We Need

Ingredients:-
1. Tiny potatoes
2. Mayonnaise
3. 2 stalks celery
4. 1 large onion
5. ½ cucumber
6. ½ tsp salt
7. ¼ tsp pepper powder
8. 2 hard cooked eggs
9. 2 tbsp fat free milk

Preparation:-

1. In a large saucepan, combine potatoes and enough water to cover potatoes. Bring to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or just until tender. Drain well; cool potatoes. Cut potatoes into medium pieces.

2.In a large bowl, combine mayonnaise, celery, onion,cucumber, salt and teaspoon pepper. Add the potatoes and egg, gently tossing to coat. Cover and chill for 6 to 24 hours.
To serve, stir enough of the milk into salad to reach desired consistency. Season to taste with additional pepper.

Potatoes are loaded with nutrients including fiber, vitamin C and potassium – they’re also free of fat and cholesterol.

Potato salad has one advantage over pasta salad-it’s almost all vegetable.

Potatoes actually have many redeeming health qualities: they’re a good source of potassium and vitamin C and naturally deliver some fiber (especially when you keep the skin on) and protein.
