Ingredients:
500g 10% fat beef mince
500g tinned tomatoes
60g cheddar cheese
400g tinned kidney beans
1 bell pepper
2 tbsp tomato paste
1 carrot
1 stick celery
1 onion
6 cloves garlic
2 tbsp Maxi’s All Purpose Seasoning
2 tsp cumin
2 tsp ground coriander
1 tbsp Worcestershire sauce
1 tbsp apple cider vinegar
Fresh coriander
1 tbsp oil
10g 85% dark chocolate
Salt
Black pepper
200g uncooked rice
1 tsp turmeric
Guac:
1 avocado
1/2 tomato
1/2 red onion
1/2 red chilli
1/2 lemon juice
Fresh coriander
Pinch of salt

Difficulty: Easy
Method:
1. Finely dice the red onion, chilli and tomato. Mash the avocado. Mix together in a bowl with lemon juice and a pinch of salt. Set aside in the fridge.
2. Finely dice the pepper and onion. Grate the garlic and carrot.
3. Cook the beef mince in a large pan until fully browned. Remove, then add the veg to the pan and cook on a medium heat for 10 minutes. Season with salt and power.
4. Add the beef mince back into the pan. Mix well and then add tomato paste. Mix well and cook off for a couple minutes. Then add the ground coriander, cumin and Maxi’s seasoning. Cook for 1-2 minutes.
5. Add the vinegar and Worcestershire sauce. After 1 minute add the tinned tomatoes. Fill tomato tin with water and add to the pan. Leave to simmer for 30-60 mins. Even longer is better, add a little more water if simmering for longer than this.
6. Wash your rice. Add to a pan with 1.5x the amount of water to rice ratio. In this case 200g rice and 300ml water. Add turmeric and salt, place a lid on and cook for 12-15 mins on a low heat.
7. Add dark chocolate to the chilli and stir through. After a couple of minutes, it’s time to serve up and enjoy!
