1 6 oz Chicken Breast. 1 TSP avocado oiI to pot. Season with salt and pepper to taste. Cook chicken and remove.
Dice up: I shallot
1 Bunch of cilantro
1 bunch of green onion
1-2 limes
1-2 red jalapeno
Set aside.

Add Thai curry paste(2 TSP), 1 diced shallot and minced ginger( 1 teaspoon) to same pot. Let flavors combine.
Next add 1 cup chicken stock, 1 can coconut milk, and a few drops of fish sauce. Add lime juice to taste(half a lime is our suggestion!) Let simmer.

To a bowl- add cooked chicken, 1 pack It’s Skinny Pasta noodles and broth. Top with green onion, jalapenos, cilantro, and lime wedges!
